Pearls are a medium currency you spend to purchase Workstation and Character Upgrades

Character Upgrade

If you want to upgrade a Character, you can do it from the Characters List by tapping on the Character List button, the second button from the left,  at the bottom of the gameplay screen.

Workstation Upgrade

In order to upgrade a Workstation, you need to tap on the Workstation List button, the first button from the left,  at the bottom of the gameplay screen.
